Grilled Ribeye Steak with Red Wine Sauce

Ingredients:
2 ribeye steaks
Salt and pepper, to taste
2 tablespoons olive oil
For the Red Wine Sauce:
1 tablespoon butter
1 shallot, finely chopped
1 cup Josh Cabernet Sauvignon or Josh Merlot
1 cup beef broth
1 tablespoon Dijon mustard
Salt and pepper, to taste
Instructions:
Preheat your grill to medium-high heat.
Season the ribeye steaks generously with salt and pepper on both sides. Drizzle olive oil over the steaks and rub it in to coat them evenly.
Place the steaks on the preheated grill and cook for about 4-5 minutes per side for medium-rare, or adjust the cooking time according to your desired doneness.
While the steaks are grilling, prepare the red wine sauce. In a saucepan, melt the butter over medium heat. Add the shallots and cook until they become translucent and fragrant.
Pour in the Josh Cabernet Sauvignon or Josh Merlot, and let it simmer for a couple of minutes to cook off the alcohol and reduce slightly.
Add the beef broth to the saucepan and bring it to a gentle simmer. Let it cook for about 5-7 minutes until the sauce has thickened slightly.
Stir in the Dijon mustard and season the sauce with salt and pepper to taste.
Remove the steaks from the grill and let them rest for a few minutes to allow the juices to redistribute.
Serve the grilled ribeye steaks on individual plates and drizzle the red wine sauce over the top.
Finally, pour a glass of Dad's favorite Josh Cabernet Sauvignon or Josh Merlot, allowing the rich flavours of the wine to enhance the succulent steak.
