Ingredients

  • 4 cups red cabbage
  • 3/4 cup shredded cabbage
  • 1 cup carrots (shredded or thinly cut)
  • 3/4 cup pineapple (diced)
  • 1 cup mango (sliced thin)
  • 3 tbsps diced red onions

For the dressing:

  • 1/4 hot pepper (scotch bonnet, diced finely, no seeds)
  • 1 cup mayo
  • 1 tsp dijon mustard
  • 3/4 tsp mustard powder
  • 3 tbsps pineapple juice (or apple cider vinegar)
  • 1 tsp white sugar
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • 1/2 lemon juice

Instructions

  1. Prepare the fruits and vegetables in a large bowl. In a separate small bowl, mix all the dressing ingredients throroughly and add dressing to the large bowl, mix together.
